After many years of training in Italy in all aspects of hospitality, I began travelling Europe working for some of the greatest names within the industry such as Orient Express Hotels (now known as Belmond), Kempisky, Hilton, Marco Pierre White and many others. I settled in Norwich in 2013.

Adi’s Kitchen was set up in 2023 with the great support of De’Ath Hospitality, who have given me the opportunity of developing my own kitchen in one of their much loved venues, so my residency at The Trafford Arms began in June 2023.

My culinary style has been influenced by every single one of my past experiences, from the attention to details found in luxury hotels, to the passion for fresh and local ingredients learnt working in the British countryside.

The menus aim to authentically nod to the contemporary and vibrant Italian culinary scene, and are carefully developed, incorporating the best of Italian ingredients and the freshest seasonal local produce. You’ll see a strong presence of Southern Italian-inspired recipes to reflect my Sicilian origins.
